Thick, Creamy, Delicious Flan

Flan is a very common dessert dish throughout the world. There are several variations, but my personal favorite is the Brazilian way. Flan is a little bit tricky to make because if it is cooked too long the flan starts to have the texture of overcooked pumpkin pie. If the flan is undercooked it is just runny eggs.
Notes
If you don't have evaporated milk or cream cheese you can use whole milk. Just note this won't be as thick afterwords. I personally prefer to use several small glass bowls of various sizes to make the flan. I like using Pyrex Glass Storage Containers.
Ingredients
- 3/4 Cup of Sugar
- 1 (8 oz) Package Softened Cream Cheese
- 5 Eggs
- 1 Can (14 oz) Sweetened Condensed Milk
- 1 Can (12 oz) Evaporated Milk
- 1 Tsp Vanilla (optional)
Instructions
- Preheat oven to 350° F
- Cook the sugar in a sauce pan for about 15 minutes. The sugar will begin to melt down and caramelize. Once the sugar is completely liquidated or caramelized pour it into a 2-Quart Souffle Dish
. If you don't have a souffle dish you can use a few glass dishes of various sizes. Just know the larger the dish you put the flan in the longer it will take to cook properly. Let the caramelized sugar set for about 10 minutes. You will hear it cracking as the sugar cools - this is nothing to worry about.
- Use beaters and whip the cream cheese until it's fluffed. Then add one egg at a time making sure that each egg is fully combined before adding another egg.
- Put the container(s) that you will put the flan in inside another tray. Boil water in a pot and add about on inch of water inside the outer or second tray.
- Mix in the can of evaporated milk and sweetened condensed milk. Once the flan is fully mixed pour the flan mixture into the souffle container over the caramelized sugar.
- Cook in oven for about 50 - 65 minutes. You will be able to put a toothpick and pull it out without having any batter stick to it when the flan is fully cooked. It should also have a slight jiggle to it.
- Cut the flan out of the container and flip it upside down. Stick it in the fridge and let it cool overnight.
